  • 2 large hot house tomatoes

  • 2 eggs

  • 1/2 tsp salt substitute

  • 1/4 tsp pepper

  • 1/4 cup grated mozzarella cheese

  • 1 tablespoon buckwheat flour (or whole wheat flour)

  • 1/4 cup of chopped, fresh parsley

  • 1 tablespoon of olive oil

1. Slice each tomato into 3 sections. Each section should be about 3/4 inch in thickness. They should look like large rings.

2. Using a cup or something similar, remove the pulp from the tomatoes (see the video).

3. Cut the pulp into small pieces and add to a bowl.

4. Chop parsley and add to a bowl. Add some parsley to the bowl with tomato pulp.

5. Add two eggs to the bowl

6. Add the salt substitute and pepper to the bowl

7. Add the buckwheat flour

8. Beat the mixture until well combined

9. Pre heat a non stick griddle on medium high heat. Add olive oil

10. Add the tomato slices (with no pulp

11. Put the mixture inside each tomato ring

12. Cover the pan and let fry for about 4 minutes (until egg sets)

13. Turn egg over and fry the other side for a few minutes

14. Add grated mozzarella cheese to each ring and top with the rest of the parsley

15. Cover for another minute until cheese is melted.
